Polyglycerol esters of fatty acids halal(PGE) are polymerized from glycerin and edible fatty acids. It is milky white to light yellow powder or granules, dispersible in water and soluble in oil. PGE is mainly used for aeration and softening of cake products. Additionally, it plays an important role in the production of margarine and low-fat spreads.

 

 

1. Polyglycerol esters of fatty acidsare palm oil-free essential emulsifiers used in cake batters, cake gels and non-dairy whipped cream toppings.
2. PGE is used in non-dairy/whipped creams to provide aeration, help spread fat throughout the mix, and provide better whiteness and a more uniform cream texture.
3. Adding polyglycerol esters of fatty acids to margarine is beneficial to improve sensory properties, stabilize emulsion, improve air permeability, and provide plasticity and elasticity.
